Sour Cream-Lemon Pie

Once again I was in charge of dessert for family dinner. After talking with my sister Kris I decided to hunt for a Sour Cream-Lemon Pie recipe like the pie at Marie Calender's except with a good homemade crust.

I found this recipe and it was really tasty and very easy to make.

Ingredients

• 1 cup sugar
• 3 tablespoons plus 1-1/2 teaspoons cornstarch
• 1 cup milk
• 1/2 cup lemon juice
• 1 tablespoon grated lemon peel
• 3 egg yolks, lightly beaten
• 1/4 cup butter, cubed
• 1 cup (8 ounces) sour cream
• 1 cup heavy whipping cream, whipped

Directions

• Make your pie crust as you like.
  
• In a large heavy saucepan, combine sugar and cornstarch. Gradually stir in milk and lemon juice; add egg yolks and lemon peel. Cook and stir over medium heat until thickened. Stir in butter and cool to room temperature. Stir in sour cream and pour filling into pie shell. Top with whipped cream. Store in the refrigerator. Yield: 8 servings.

Random Act of Kindness - Day 18

Today I woke up at 4:45am in order to drive my parents and nephew to the airport. This is something I would do anyway but Sundays are the only day I sleep in so this was a sacrifice for me.

Random Act of Kindness - Day 16

At Zupa's today a heavier older lady with a cane set her tray down at the table next to me. A few minutes later I saw her walking to a table farther away to join her friends. Knowing it was her tray of food, I transferred the tray for her so she didn't have to carry it along with her cane.

Random Act of Kindness - Day 13

After today I will have to call my project The 24 Days of Random Acts of Kindness. I'm sorry to report that I didn't accomplish anything today. I will do my best to double up tomorrow.

Random Act of Kindness - Day 12

Today I donate cash to the Salvation Army. For some reason I always ignore the people outside the store ringing their bells. This year I ignored my inner Scrooge and gave.

Random Act of Kindness - Day 11

I am going to be honest and report that I didn't do anything specific for my act of kindness today. So I will be selfish and claim accepting a second calling as my kind deed for the day. I am on the Relief Society Board (in charge of monthly activities and Ward parties) and now I am the Primary Chorister.

Random Act of Kindness - Day 10

Today was our Ward Christmas Party and as part of the committee I was very proud of how great this party was. Since it took up most of my day it was hard to have a planned "act of kindness." To help the committee leader during the party I watched her 1 year old daughter.
